When I was still in youth Sunday School class at my church, we were sent home with an assignment — come up with our own recipes for sugar-free desserts. Since I was a rather inexperienced-in-the-kitchen seventeen-year-old with a fondness for sweets, it seemed like an impossible task. But then I actually looked around our kitchen, and found that all the ingredients for a delicious low-calorie dessert were right at my fingertips! These popsicles are quick, easy, and VERY refreshing, especially when you want to beat the heat. For this recipe, you will need:
2 cans of La Croix, one lemon flavored and one lime flavored (You can use any sugar free bubbly drink, but La Croix got me the best results.)
1 half of a lemon
1 half of a lime
12 - 18 drops of Stevia sweetener or other low-carb sweetener to taste.
1 popsicle mold
Directions:
Mix the 2 cans of La Croix together in a large cup or pitcher.
Add the drops of Stevia.
Squeeze out all the juice from your halves of lemon and lime.
Stir ingredients together until you’re confident that the flavors are properly mixed.
Pour the mixture into the popsicle mold and place it in the freezer overnight.
Carefully pop them out — running the mold under hot water first helps.

These things are insanely delicious for being low carb. It doesn’t take long to prepare, and it is a very flexible recipe, which you can tweak, depending on how much sour you can handle. Personally, I like mine to have a sour bite, but you can reduce the amount of lemon and lime juice if you have more of a sweet tooth! Or, if you REALLY like to torture your tongue, you can add a whole lemon and a whole lime! The possibilities are endless. I hope you like my silly little Sunday School dessert, and hopefully your kids will love it, too!
